Why the ingredient matters

Mass equals volume times density. A US tablespoon is always 14.79 mL — that part is fixed. What changes is how much mass fits into that volume. Water defines the reference at 1.00 g per mL, so a tablespoon of water weighs 14.79 g. Anything denser than water (honey at 1.42 g/mL, table salt at 1.22 g/mL) weighs more per tablespoon. Anything less dense (flour, cocoa, vegetable oil) weighs less.

The range across kitchen ingredients spans from about 0.5 g/mL (cocoa powder, powdered sugar) to 1.5 g/mL (honey, dense syrups). That is almost a 3× spread. Substituting "1 tbsp" of one ingredient for another by volume can deliver less than half the intended mass — or twice as much. For baking, where ratios matter, this is the difference between a working recipe and an unsalvageable one.

The tablespoon is not universal

Three different tablespoon sizes are in use today. The US tablespoon is 14.79 mL, defined as half a US fluid ounce. The UK and most metric countries use 15 mL — close enough that the 1.4% gap rarely matters. Australia uses 20 mL, defined as 4 teaspoons rather than the 3 teaspoons of the US and UK systems. That makes the Australian tablespoon 35% larger than the US one.

The reasoning was practical: 20 mL is a clean fraction of 1 litre (1/50) and made measuring spoon manufacture simpler than the awkward 15 mL standard. Every other major metric country kept 15 mL, so Australian recipes are now incompatible with imported measuring spoons unless the cook knows to multiply by 0.75.

Flour: the trickiest one

Of all the ingredients in this list, flour gives bakers the most trouble. The USDA reference for all-purpose flour is 7.8 g per US tablespoon, but the real value can range from 7 to 10 g per tablespoon depending entirely on how you put it in the spoon.

Scooping the spoon directly into the flour bag packs the flour into the spoon and lifts a heaped measure — often 9 to 10 g. Spooning the flour into the measuring spoon and levelling it off with a knife gives 7.5 to 8 g. Sifting first gives 6 to 7 g. The same recipe with the same number of tablespoons can produce a 30% difference in actual flour weight, which is the difference between a workable dough and a brick.

1 cup of flour ranges from 110 g to 150 g

This is why professional bakers weigh everything. The USDA value for 1 cup all-purpose flour is 125 g. King Arthur Baking uses 120 g. Real-world measurement studies have found home bakers ranging from 110 g (spoon and level) to 150 g (scoop and pack). That 36% spread is enough to destroy any bread recipe.

Sugar: three different kinds

Sugar comes in three common forms, each with a different density. Granulated white sugar is 12.5 g per US tablespoon. Brown sugar packed firmly is 13.8 g — the molasses content makes the crystals stickier and they pack tighter. Powdered (confectioners) sugar is only 7.5 g per tablespoon, because the very fine grind traps air between particles.

The "packed" convention for brown sugar is unique to that ingredient. Recipes will specify "1 cup packed brown sugar" or "1 cup firmly packed." Both mean the same thing: press the sugar down into the cup with the back of a spoon until you can invert the cup and the sugar holds its shape. A loosely measured cup of brown sugar weighs about 145 g; packed firmly it weighs 220 g.

Salt: same volume, very different weight

One tablespoon of table salt weighs 18 grams. One tablespoon of Diamond Crystal kosher salt weighs 9.6 grams. Same chemical (sodium chloride), same volume, almost exactly half the weight. The difference is crystal shape.

Table salt has tiny, dense cubic crystals that pack tightly with little air between them. Diamond Crystal kosher salt has large, flaky, irregular crystals (made by the Alberger evaporation process) with substantial air gaps. Morton kosher salt is yet a third value — 14.4 g per tablespoon, because Morton uses a different crystal-formation process. If a recipe says "1 tbsp salt" without specifying which kind, the intended sodium content can vary by almost 2×.

Liquids: water, honey, oil

Water is the reference: 1.00 g per mL, so 14.79 g per US tablespoon (or 15 g in metric). Whole milk is slightly denser — 1.03 g/mL — making a tablespoon weigh 15.3 g. Vegetable oils are less dense than water, around 0.91 g/mL, putting a tablespoon at 13.5 g.

Honey is the densest common kitchen liquid. At 1.42 g per mL, a tablespoon of honey weighs 21 g — almost half again as much as the same volume of water. Maple syrup is around 1.33 g/mL (19.6 g/tbsp); molasses is similar. Corn syrup ranks with honey at 1.38 g/mL. Heavy cream is 1.00 g/mL, identical to water.

Measuring without a scale

Use measuring spoons, not flatware. A teaspoon from a kitchen drawer can hold anywhere from 3 to 8 mL. A real measuring teaspoon holds exactly 4.93 mL. The same applies to soup spoons versus measuring tablespoons.

Level every measurement. Drag the back of a knife across the top of the spoon to remove the heaped excess. A "heaped tablespoon" holds 50% more than a level one — the source of half the world's failed recipes.

Spoon, do not scoop, for flour. Use a separate spoon to transfer flour into the measuring spoon, then level. Scooping directly compacts the flour and adds 20-30% to the measured weight.

Pack brown sugar firmly, but only brown sugar. Press down with the back of a clean spoon. The packed cup is the standard.

Tip

If a recipe gives both grams and tablespoons (or cups), trust the grams. Volume measurements assume a specific measuring technique that the recipe author rarely documents. Weights are unambiguous. A $15 kitchen scale eliminates almost every measurement error in home baking — pastry-school students are taught to weigh from day one.

Common mistakes

Treating "1 tablespoon" as a universal weight. The number changes by ingredient. 1 tbsp of honey is almost 3× heavier than 1 tbsp of cocoa powder.

Mixing US and Australian tablespoons. A US recipe "3 tablespoons of vegetable oil" calls for 44 mL. Using an Australian measuring spoon delivers 60 mL — 36% more.

Using "1 tbsp salt" without specifying which salt. Cooking salt-by-volume to a recipe written for a different salt grade can over- or under-salt a dish by a factor of nearly 2. Recipe writers who care will specify "kosher salt" and the brand.

Scooping flour. By far the most common baking error. A "1-cup" scoop can deliver anywhere from 110 g to 150 g of flour. Pancakes turn out gummy; bread fails to rise.

Confusing fluid ounces with weight ounces. A fluid ounce is a volume (29.57 mL). A weight ounce is a mass (28.35 g). For water the two happen to be close, which is why the confusion persists. For honey or flour they are far apart.
