Grams to Tablespoons: Ingredient-Specific Conversion
Grams measure mass, tablespoons measure volume. The conversion depends on the ingredient: 100 g of all-purpose flour is 12.82 US tablespoons, 100 g of granulated sugar is 8.00, 100 g of honey is 4.76. A single "1 tbsp = 15 g" rule only works for water. One US tablespoon is 14.79 mL (half a fluid ounce).
Most European recipes give weights, and most American kitchens are stocked with volume measures. If you only have measuring spoons and a recipe in grams, you need the density of the specific ingredient. Why density matters
A tablespoon is a fixed volume: 14.79 mL in the US, 15 mL in metric countries, 20 mL in Australia. Pour water into one and it weighs the same as the volume, since water is 1.00 g/mL by definition. Pour honey in and you get 21 g, because honey is 1.42 times denser than water. Pour flour and you get 7.8 g, because flour is loose and full of air pockets.
Density alone explains the differences. Honey at 1.42 g/mL is one of the densest common kitchen ingredients. Flour at 0.53 g/mL is one of the least dense. Three-fold spreads in mass per spoon are normal. There is no shortcut; you need the right number for the ingredient.
Honey is 80% sugar by weight (mostly glucose and fructose), 17% water, and 3% other substances. The tightly packed sugar molecules give it the highest density of any everyday food. The FAO/INFOODS Density Database lists honey at 1.38-1.45 g/mL, with crystallization-prone varieties (rapeseed honey) at the high end and runnier ones (acacia) at the low end.
Flour, the trickiest ingredient
All-purpose flour is the most-asked-about ingredient because it varies the most. USDA references put it at 7.8 g per US tablespoon. King Arthur Baking uses 7.5 g/tbsp. The European convention is roughly 8 g/tbsp. Bread flour packs a bit denser at 8.5 g/tbsp; whole-wheat flour sits at 8.0 g/tbsp.
The real complication is technique. The same tablespoon of flour can weigh 6 g (lightly spooned and levelled), 8 g (typical), or 11 g (scooped straight from the bag, which compresses the flour). A 50-gram recipe call-out could be 6 tbsp or 8 tbsp depending on how the measurer handled it. This is why baking professionals weigh.
Spoon-and-level is the standard technique. Use a spoon to lift flour from the container into your measuring tablespoon, mounded over the top, then drag a knife across the rim to remove the excess. Never scoop the measuring spoon directly into the flour — it packs the flour and adds 20-30% mass.
Sugar, honey, and syrup
Granulated white sugar is 12.5 g/tbsp, denser than flour because the crystals pack more tightly. Brown sugar "packed" (pressed firmly into the spoon) is 13.8 g/tbsp; the same brown sugar loose is closer to 10 g/tbsp. Powdered (confectioners) sugar is the lightest sugar at 7.5 g/tbsp because it traps a lot of air.
Liquid sweeteners are denser still. Honey at 21 g/tbsp is the heaviest. Maple syrup follows at 20 g/tbsp. Corn syrup is 21 g/tbsp (essentially the same as honey). Agave nectar is 19 g/tbsp. If a recipe lists honey or syrup in grams, divide by roughly 20 to get tablespoons — close enough for most cooking.
Butter and fats
Butter sits at 14.2 g/tbsp, almost identical to water. A standard US butter stick is pre-marked: one stick = 4 oz = 113 g = 8 tbsp = ½ cup. Each marked unit equals 1 tbsp = 14.2 g, which is why American recipes routinely call for "3 tablespoons of butter" — it is a unit you can read off the wrapper.
Vegetable oil and olive oil are 13.5 g/tbsp (density 0.91 g/mL). They are lighter than water by about 10%. Cream and cream cheese sit near 15 g/tbsp because both are emulsions close to water density.
Salt confusion
Salt is where most home cooks go wrong. Fine table salt is 18 g/tbsp — the heaviest powder in the kitchen because the small crystals pack tightly. Diamond Crystal kosher salt is 9.6 g/tbsp, almost half as heavy by volume because of its large, flat flakes with air gaps between them. Morton kosher salt sits in between at about 15 g/tbsp.
The practical fallout: a recipe written for kosher salt that you cook with table salt by volume will be twice as salty as intended. Many American food writers (Samin Nosrat, Kenji López-Alt) specify Diamond Crystal kosher salt by name precisely because of this difference. If a recipe gives salt in grams, the brand stops mattering.

Tablespoon sizes worldwide
The US tablespoon is 14.79 mL, defined as exactly half a US fluid ounce. The UK and most metric countries use 15 mL, rounded for convenience. The difference of 1.4% is negligible for cooking. Australia is the outlier: its tablespoon is 20 mL, four teaspoons rather than three. An Australian recipe that says "3 tablespoons of butter" means 60 mL (4 US tbsp).

Professional bakers weigh ingredients. Home bakers who learn to weigh tend to get better results faster than those who stick to volume. The reason is consistency. The biggest mistake is using one conversion factor for every ingredient. The "1 tbsp = 15 g" shortcut works only for water and a few water-like liquids. Apply it to flour and you over-measure by 90%. Apply it to honey and you under-measure by 40%.
