Understanding the meat footprint
A meat footprint is the environmental cost of producing the meat and animal products you eat, measured as carbon emissions, water use and land use. Beef sits at the top at about 27 kg CO₂e per kilogram, while chicken is near 6.9 kg and lentils under 1 kg. Livestock as a whole drives roughly 14.5% of global greenhouse gas emissions.
That share rivals the entire transport sector. Aviation alone contributes only 2 to 3%. The good news is that the meat footprint is one of the most controllable parts of a personal carbon budget. Shifting what is on the plate, rather than where it came from, delivers most of the savings.
What is a meat footprint?
A meat footprint is the total environmental impact embodied in a kilogram of meat or animal product, calculated with Life Cycle Assessment (LCA). LCA traces every stage of production: growing feed, the animal's own digestion and manure, slaughter and processing, transport, and storage. The result is reported in three units that this calculator uses, carbon dioxide equivalent, litres of water, and square metres of land.
The values are not guesses. The reference figures here come from Poore and Nemecek's 2018 study in Science, which pooled data from about 38,000 farms across 119 countries. Because farming varies so much, the study reports medians rather than single numbers. Your real impact can be higher or lower depending on the country of origin and the farm.
The livestock sector occupies 77% of the world's agricultural land but supplies only 18% of its calories and 37% of its protein. That imbalance is the core of the land side of the meat footprint.
The carbon footprint of meat
The carbon footprint of meat is dominated by ruminant animals. Beef averages 27 kg CO₂e per kilogram and lamb 24 kg, several times higher than pork at 12 kg or chicken at 6.9 kg. The gap comes down to biology rather than farming skill alone.
Cattle and sheep are ruminants, so their digestion produces methane, a greenhouse gas about 28 times more potent than CO₂ over a century. They also grow slowly, taking two to three years to reach slaughter weight, which means years of feed, fertiliser and field machinery behind every steak. Pigs and chickens skip the methane problem and convert feed into meat far more efficiently, which is why their carbon footprint is a fraction of beef's.
Region matters too. Beef linked to cleared Amazon forest can reach 30 to 50 kg CO₂e per kilogram, because the lost trees would have stored carbon. Efficient grain-fed systems in the United States sit closer to 19 to 27 kg. The calculator uses the global median so it stays comparable across foods.
Water in the meat footprint
Water is the most surprising part of the meat footprint, because most of it is invisible. Producing one kilogram of beef uses about 15,415 litres of water. A single 200 g portion carries roughly 3,000 litres, more than many people drink in years.
Around 98% of that water never touches the animal directly. It irrigates the grass and feed crops that the animal eats over its lifetime. Pork sits near 5,988 litres per kilogram and chicken around 4,325, again tracking how much feed each animal needs. Dairy is lighter, with milk around 1,020 litres per kilogram, though hard cheese climbs back up because it concentrates many litres of milk into one kilogram.
A large share of the water in the meat footprint is rain that falls on pasture and would have fallen anyway. The real concern is blue water, the irrigation drawn from rivers and aquifers in dry regions. Two beef figures with the same total can have very different stress on local supplies.
Land use and the meat footprint
Land use is where the meat footprint becomes a biodiversity story. Beef needs about 25 m² of land per kilogram and lamb around 30 m², counting both pasture and the cropland that grows feed. Chicken needs roughly 7 m², and lentils under 2 m².
Between 2001 and 2015, about 45 million hectares of forest, an area close to the size of Sweden, were converted to cattle pasture. Clearing forest for grazing does double damage: it releases stored carbon and removes a future carbon sink. This is why land use and the carbon footprint of meat are tied together rather than being separate problems.

Plant proteins vs. the meat footprint
Plant proteins cut the meat footprint dramatically across all three measures. Lentils and beans emit about 0.9 kg CO₂e per kilogram, and tofu around 2.0 kg, which is 13 to 30 times lower than beef. They also need a fraction of the land and avoid the methane problem entirely.
Processed meat substitutes are a middle ground. A product like Beyond Meat lands near 3.9 kg CO₂e per kilogram, far better than beef but higher than tofu or lentils, because extra processing adds energy. If the goal is the smallest possible footprint, lightly processed pulses beat both real meat and engineered alternatives.
You do not have to be perfect. Replacing beef with chicken for half your meat meals can cut the carbon footprint of your diet's meat by around a third, with no change to how often you eat meat.
How to cut your meat footprint
The fastest way to cut your meat footprint is to target the highest-impact foods first. Beef, lamb and hard cheese carry the most weight, so even small reductions there beat large changes to low-impact foods.
Swap beef for chicken or fish where you can, since that single change removes most of the emissions per meal. Add one or two meat-free days each week built around lentils, beans or tofu. Choose milk over hard cheese when the recipe allows. Finally, cut food waste, because meat thrown away carries its full footprint for zero nutrition. Buying "sustainable" beef helps at the margin, trimming perhaps 20 to 30%, but it cannot match the effect of eating less of the highest-impact meats.
Eating 100 g of beef every day for a year produces close to 986 kg CO₂e, comparable to driving an average car several thousand kilometres. Switching that habit to chicken cuts it to about 250 kg.
Common meat footprint mistakes
The most common mistake is assuming that local meat has a low meat footprint. Transport is usually under 1% of food emissions, so a local steak still carries the methane and land cost of beef. What you eat matters far more than how far it travelled.
A second mistake is treating all meat as equal. Chicken and beef differ by nearly four times in carbon, so lumping them together hides the easiest win available. A third is ignoring cheese, which at 25 kg CO₂e per kilogram rivals beef and is often eaten in large amounts.
