Look up your last spring frost

The single most important date for a vegetable garden. Use The Old Farmer’s Almanac or the USDA hardiness map to find your average last spring frost — the date after which a freeze is unlikely. Enter it in the date field.

Choose start-indoors or direct sow

Warm-season crops with long maturity times (tomatoes, peppers, eggplant) almost always want an indoor head start. Beans, corn, peas, spinach, and cucurbits prefer direct sowing — their roots resent disturbance.

Add the first fall frost too: entering both frosts unlocks fall-planting windows for cold-hardy crops and triggers a warning if your season is too short for the crop you picked.
Soil temperature beats air temperature: the calculator uses air-frost dates, but warm-season seeds want 60–65°F soil. Stick a thermometer in the bed 4 inches deep before sowing.

Ask any extension agent what kills more vegetable gardens than pests, drought, and bad soil combined and the answer is almost always the same: planting on the wrong date. A tomato set out two weeks too early loses its first truss to a 30°F night. Lettuce sown two weeks too late bolts in the first heat wave and goes bitter. The calendar lies; the frost dates do not. A planting-date calculator turns the two reliable numbers in your local climate — the last spring frost and the first fall frost — into a working schedule for any crop you want to grow.

The system works because plants do not read calendars. They read soil temperature, night minimums, and day length. Those three variables track frost dates closely enough that an offset from the last frost — six weeks before for tomato seeds, two weeks after for transplanting them, five weeks before for direct-sown peas — gives a date the plant itself will agree with.

Why the planting date matters more than the calendar

The growing season is the stretch of frost-free days between the last spring frost and the first fall frost. In zone 9b Florida it runs almost year-round. In zone 3 northern Minnesota it shrinks to 90 days. The same packet of tomato seeds — rated 75 days to maturity — behaves very differently in those two seasons. The Florida grower can risk an early transplant and gamble on a late one; the Minnesota grower has no slack at all and has to start indoors to get any harvest at all.

Every crop has a frost-tolerance temperature below which its tissues are damaged. Spinach shrugs off 20°F. Lettuce holds at 28°F. Tomatoes start dying at 40°F. Peppers stall at 50°F — they do not freeze, but they refuse to set fruit and may abort flowers already on the plant. These numbers, not the calendar, decide the planting window.

Planting dates by crop family

Vegetables split into two big groups by temperature requirement, and the planting-date math is different for each.

Cold-hardy crops — peas, spinach, lettuce, kale, broccoli, cabbage — want cool soil. They germinate at 35–40°F, tolerate light frost, and bolt or grow bitter once summer heat sets in. They sow 2–5 weeks before the last spring frost, which means you can be planting outside while the soil thermometer still reads under 50°F. Most of these crops give a second harvest in fall when you sow them 8–14 weeks before the first fall frost.

Warm-season crops — tomatoes, peppers, eggplant, basil, cucumbers, squash, beans, corn — want warm soil. They die at the slightest frost, sulk in cold soil, and only start to thrive once nights stay above 50°F. Long-maturity warm-season crops (tomato, pepper, eggplant) need to be started indoors 6–10 weeks before the last frost just to reach maturity inside the season. Short-season ones (beans, squash, cucumber) tolerate direct sowing 1–3 weeks after the last frost.

Frost dates and USDA hardiness zones

The USDA Plant Hardiness Zone Map divides the U.S. into 13 zones based on average annual minimum winter temperature, with each zone representing a 10°F band. The zones run from 1 in interior Alaska to 13 in tropical Hawaii and Puerto Rico. The map answers the perennial question — can this rose survive my winter? — but it also correlates strongly with average last-frost and first-frost dates, which is why frost-date calculators usually accept a zone as a shortcut.

Zone 5 (winters bottoming out at −20 to −10°F) covers most of the Great Lakes states and southern New England; last frost runs late April to mid-May. Zone 7 (0 to 10°F) covers Virginia, Tennessee, and the lower mid-Atlantic; last frost is late March to mid-April. Each one-zone southward shift cuts the last-frost date by roughly two weeks and lengthens the growing season by about a month.

Microclimates trump the map

The hardiness map is averaged across each zone and cannot show city heat islands, north-facing slopes, frost pockets in valleys, or sheltered south-facing walls. A garden 100 feet from a south-facing brick house often holds its tomatoes a week longer in fall than the same garden in an open field two blocks away. Use the map for orientation, then track your own frost dates over two or three seasons.

Starting indoors vs direct sowing

Indoor starting is a head start, not a luxury. For tomatoes, peppers, and eggplant in any zone north of about 8, the season simply is not long enough to direct-sow and still get a harvest. A pepper seed planted in 50°F outdoor soil in May will not germinate; even if it did, the plant would not produce ripe fruit before fall frost. Starting indoors moves the clock 6–10 weeks earlier under controlled conditions: 70°F soil, no slugs, no late-spring downpour, a 16-hour light cycle from a cheap LED shop fixture.

Direct sowing is right for crops whose taproots resent disturbance. Beans, peas, carrots, beets, corn, and most cucurbits send a deep central root almost immediately; transplanting cuts it, the plant stalls, and the harvest is delayed or smaller than a direct-sown bed planted on the same day. The rule of thumb: if the crop family ends in “-aceae” for a fast-growing one (Fabaceae beans, Poaceae corn, Cucurbitaceae squash), default to direct sowing unless you genuinely need the calendar buffer.

Even after the last frost passes and daytime air hits 70°F, the soil 4 inches down may still read 55°F — cool enough to stall warm-season seeds. A $10 soil thermometer is the single most useful tool for getting planting dates right in marginal years.

The forgotten fall planting window

Most home gardens go to seed in late August, with the cold-hardy crops long since bolted and the warm-season ones racing to ripen before fall frost. They miss a second full planting window that runs from mid-July to early September in most of the country, where the same cold-hardy crops — spinach, lettuce, kale, broccoli, peas — can be sown for fall harvest.

The math runs backward from the first fall frost: subtract days to maturity, then add 14 days for the shorter day length and lower light levels of late summer and early fall. A 50-day spinach crop, planted on August 1 for an October 5 expected frost, would mature in 65 days — comfortably before frost. Kale, which sweetens after a light frost, actually tastes better from a fall planting than a spring one.

Common planting-date mistakes

Trusting a single warm spell in March

Two 70°F afternoons in late March push every gardener in the Midwest to consider planting tomatoes. The Cornell Cooperative Extension warns explicitly against this: the last spring frost is a date, not a guarantee, and a single 28°F night will end a tender transplant. Wait at least 7–14 days past the official last-frost date for anything you cannot afford to replant.

Days-to-maturity from the seed packet are minimums

Packet figures assume optimal soil, water, and sunlight. In cool springs, on heavy clay, or under partial shade the actual maturity time runs 10–20% longer. Iowa State University Extension recommends adding 14 days when calculating fall harvest dates from spring sowing dates to account for the shorter, cooler days at the back end of the season.

Transplanting a direct-sow crop

Beans, peas, carrots, beets, and corn all sulk badly after transplant. If you started them indoors anyway (in newspaper pots, for instance), set them out as soon as they have two true leaves — older seedlings transplant worse, not better. The University of Georgia Extension flags squash and cucumber as particular offenders; use only biodegradable pots that go in the ground intact.

Ignoring soil temperature

Air frost passes but the soil stays cold for another two weeks. Beans planted into 55°F soil rot before they germinate. Tomato roots stall and the plant turns purple from phosphorus lock-out. Wait for soil at 60°F minimum for warm-season transplants and 65°F for direct-sown warm-season seeds.
